Quick & Easy Recipe for Overripe Bananas
I'm very picky when it comes to banana ripeness. I tend to like my bananas on the greener end, whereas Dr. Scott likes his bananas a beautiful golden yellow. But neither of us like overripe bananas & I really hate throwing out #food. So I came up with a simple way to take overripe bananas from something that is torturous to eat to something really delicious!
Unlike banana bread (which is delicious), this is a simple #recipe that can be made in the microwave with 3 simple, everyone-has-them ingredients, all in a matter of minutes.

This recipe is best used as a topping or mix-in. But I think it is delicious enough to scoop with a spoon & eat all by itself. Plus it's a healthy snack!
Quick & Easy Banana Topping Recipe
1/2 teaspoon of #cinnamon (per banana)
1/2 teaspoon of #vanilla extract (per banana)
Note: You can certainly modify the amount of cinnamon & vanilla extract used to suit your taste. Or you can try different spices & extracts to change the flavor profile!
In a microwave safe container, add your overripe bananas & smash them a little bit with a fork. Add in your cinnamon & vanilla extract to the microwave safe bowl & gently mix in with the bananas. Microwave on high for 1:30 minutes (note: keep in mind that each microwave is different & if you are unsure, start at a minute & gradually add time as needed). You'll notice as the mixture is microwaving that the bananas will start to smell sweeter (like they do when they are cooked)- this is how you'll know it's done! Allow it to cool for a minute or two so not to burn your tongue.
