Guilt Free Chocolate Rice Pudding

I have watched my mom make rice pudding for years & even though this isn't the Norwegian version we always have at Christmas, it is the Norwegian technique that has been passed down for generations in my family. Rice pudding has also quickly become one of Dr. Scott's favorite desserts (he even requests it instead of cake for his birthday)!

The secret to this rice pudding (or any well made rice pudding) is cooking the rice in milk, or in our case the coconut milk. It makes it super creamy & thick. And what makes this recipe healthy is the use of non-diary, unsweetened milk, no sugar & substituting brown rice over a white rice variety.

Guilt Free Chocolate Rice Pudding


Makes 2-4 servings.

1 cup of brown rice

2 cups of unsweetened coconut milk (or non-diary, unsweetened milk)

1/4 cup of shredded unsweetened coconut

30 fresh cherries, divided

3 tbsp of cocoa powder

2-3 tbsp of honey

1 tsp of almond extract

Pinch of salt

Shake of Cinnamon


Cook brown rice, coconut milk, & shredded coconut in a saucepan over high heat & bring to a boil. Once it starts boiling, reduce to low & cover. Cook for 20 minutes (if the rice is still firm after 20 minutes, add more time & coconut milk as needed). While the rice cooks, remove the pits from the cherries & cut into quarters. Add half the cherries to the rice when there is 10 minutes left on the timer & cook with the rice.

Once the rice is cooked, stir in the cocoa powder, honey, almond extract & salt until combined.

Most rice puddings are served cold but I served mine warm & it was delicious! If you want to serve it cold, put it in the refrigerator for 2-4 hours.

Top with the rest of the fresh cherries & sprinkle with cinnamon & serve.
